- 1 large onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 celery stalks, diced

- 2 cups vegetable broth

Instructions:
- Sauté Veggie Chicken: In a large pot or Dutch oven, heat 1 tbsp of olive oil over medium-high heat. Add Veggie Valley Chicken Pieces and cook until golden brown. Remove from pot and set aside.
- Sauté Vegetables: In the same pot, add the remaining olive oil. Add the onion, bell peppers, and celery. Sauté for 5-7 minutes until the vegetables are tender.
- Add Garlic and Spices: Add minced garlic, smoked paprika, thyme, oregano, cayenne pepper (if using), salt, and black pepper. Cook for another 1-2 minutes until fragrant.
- Add Tomatoes and Rice: Stir in the diced tomatoes (with their juice) and the rice. Cook for 2-3 minutes, allowing the rice to absorb some of the flavors.
- Add Broth and Bay Leaf: Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
