Plant-Based Chicken Biryani

Description

Ingredients:

  • 1 package of Veggie Valley Chicken Pieces
  • 2 cups basmati rice
  • 4 cups water
  • 2 tbsp vegetable oil
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tomatoes, chopped
  • 1 cup plant-based yogurt
  • 2 tsp biryani masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro and mint leaves for garnish
  • Fried onions for garnish (optional)

Instructions:

  1. Cook Rice: Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring 4 cups of water to a boil. Add the rice and cook until 70% done (about 5-7 minutes). Drain and set aside.
  2. Sauté Veggie Chicken: In a large skillet, heat vegetable oil over medium heat. Add the Veggie Valley Chicken Pieces and cook until golden brown. Remove from skillet and set aside.
  3. Prepare Biryani Base: In the same skillet, add sliced onions and sauté until golden brown. Add garlic and ginger, and sauté until fragrant. Add chopped tomatoes and cook until soft.
  4. Add Spices: Stir in biryani masala, ground cumin, ground coriander, turmeric, paprika, and garam masala. Cook for 2-3 minutes to release the flavors.
  5. Add Yogurt and Veggie Chicken: Add plant-based yogurt to the skillet and mix well. Add the sautéed Veggie Valley Chicken Pieces back into the skillet. Cook for 5 minutes until everything is well combined and heated through. Season with salt to taste.
  6. Layer Biryani: In a large pot, layer half of the partially cooked rice at the bottom. Add the veggie chicken mixture over the rice. Top with the remaining rice.
  7. Dum Cooking: Cover the pot with a tight-fitting lid or aluminum foil to seal it. Cook on low heat for 20-25 minutes, allowing the flavors to meld together.
  8. Serve: Garnish with fresh cilantro, mint leaves, and fried onions (if using). Serve hot with raita or salad.
